My name is Kayla Cappiello and I am gluten free, lactose intolerant and allergic to tree nuts like almonds! When I first went gluten free, I found easy weeknight meals SOOO hard to find. Going gluten free is overwhelming and forces you to adjust and pay attention to every single thing you are eating. I wanted so badly to find easy gluten free recipes that were perfect for dinner, that had minimal ingredients, and could be made in 30 minutes or less.
Because these types of recipes were so hard to find, I set out on my journey to master them myself! It took me years, but now, as a full time food blogger and recipe creator, I’m happy to share with you 10 easy gluten free weeknight dinner recipes to make YOUR LIFE EASIER! After going gluten free, some days I just miss being able to order a burger or a chicken sandwich at a bar. They always have such good bar toppings and I love sandwiches and finger food out at a restaurant. The only way to get this type of burger was to make it at home! To me, mexican food is the easiest to make gluten free and nut free! Which means, its SUPER easy to make allergy friendly. This chicken taco rice casserole is an easy gluten free meal. It is also a nut free recipe.
After going gluten free I just swapped all the flour tortillas in my mexican recipes out for corn tortillas. The recipes were able to be easily adjusted and still taste super delicious and authentic!

6. ONE PAN SWEET POTATO SKILLET (GLUTEN FREE)
When I was diagnosed as celiac, lactose intolerant and allergic to almonds, I had no idea what to eat. I had been doing meal kits with my roommate at the time and although some recipes were allergy friendly, I felt like I needed to be more hands on. We used to love this sweet potato taco recipe from the meal kit so instead of making it with flour tortillas, I started making this skillet version instead. This one pan sweet potato skillet has a lot of the same flavors but without any of the flour tortillas.

In case you didn’t know, most asian and chinese dishes served at restaurants use soy sauce and soy sauce is not gluten free! So to me, making an asian inspired dish at home is 100x safer if you are gluten free.
